Salsa is something I thought I didn’t like for about 15 years of my life. I hate to say, I didn’t even like tacos until I was almost in my teens. Spicy is still not my thing, and back then I thought all Mexican food was too spicy for me. Little did I know that almost 20 years later, Mexican food would be my first choice any and every night of the week.
I learned this super easy and quick salsa recipe about 5 years ago and it will always be a go-to for me. While it is not spicy, if you like spicy, feel free to add a different hot sauce or jalapenos.
Now, in true “me” fashion, let’s get straight to the recipe!
- 2 tomatoes- diced
- 1/2 red onion, diced
- 1/2 green pepper- seeds removed, diced
- 1Tbsp. cilantro- chopped
- 1/2-1 Tbsp. Minced garlic (to taste… I always do 1+)
- 2-3 tsp. lime juice (start with 2, add more to taste)
- 2-3 tsp. Texas Pete (start with 2, add more to taste)
- pinch of salt, pinch of pepper
Combine all ingredients. Adjust to taste.
To make more of a pico de gallo: use 4-6 roma tomatoes instead of vine/slicer tomatoes, scoop out seeds and liquid before dicing.
See? Super easy! It stays good in the fridge for up to a week, but good luck keeping it around that long!
