Guacamole is something that is incredibly easy to make. However, if you’re anything like me you got into the habit of buying it, and never bothered to learn how to make it. That all changed for me a few years ago. A friend of mine made a killer guacamole. I decided it was time to stop paying insane prices when half of it would always be bad by the time I got to finish it, so I finally asked for the recipe. I brought it home and figured out the exact amounts of everything to make it super delicious. (She is the type of cook that goes by “a little of this” “a handful of that”) So here it is, a crazy easy, and super delicious guacamole recipe:

1 Avocado
1 Roma Tomato (seeds and juice scooped out, the rest chopped)

1/4 cup chopped red onion
1 1/2 tbsp lemon juice
1 tsp. Hot sauce (adjust up to taste)
1/4 tsp salt
1/4 tsp pepper
if desired, 1/2 tbsp chopped cilantro.
Here’s what you do:
Mash the avocado, add the lemon juice and hot sauce to help make it easier to smooth. If you want the avocado completely smooth, use an immersion blender for about 30 seconds. I usually just use a spoon or fork, and keep some small chunks of avocado. Add remaining ingredients and mix until evenly distributed.

Thats it! Super easy! If you want more, add an avocado and double the recipe! This recipe is perfect for about 2 to 3 people. Or just you for dinner, like I used to do before I had to figure out something healthy for a husband and son also.
